Why Raw?
The essence of understanding living foods is ... if it is not
broken, don't fix it. Living foods or raw foods are those, which have not been cooked,
processed, "pesticided" or "herbicided", micro waved, irradiated, or
genetically engineered. They represent an unbroken wholeness that is the original creation
and nutritional gift of the Divine. The understanding that the food we eat is an energetic
whole greater than the sum of the parts reflects a quantum mechanics view of nutrition.
Research by Dr. Brekhman of the former Soviet Union illustrates a
foundational truth - when he gave whole, live foods to animals, their endurance was 2-3
times greater than if he gave them the same foods after they had been cooked. From a
traditional nutritional perspective there should not be a difference since cooked and raw
foods have the same amount of calories and therefore the same amount of energy. Brekhman's
results can be explained, however, if we understand the effect of cooking on the whole
food. Thorough cooking destroys the ecological balance of the food. It makes 50% of the
protein unavailable, destroys 60-70% of the vitamins, up to 96% of the B12, and 100% of
phytonutrients such as: gibberellins, anthrocyans, nobelitin, and tangeretin which boost
the immune system and other body functions. Cooking foods also disrupts the bioelectrical
structure, the bioelectricity transfer power, and the bioluminescence. All of these
factors are important for building and maintaining our life force energy and health.

Cooking destroys enzymes in live foods. Enzyme reserve seems to
be connected to life force, health, and longevity. Enzymes are living biochemical factors
that activate and carry out all the biological processes in the body such as digestion,
nerve impulses, detoxification processes, functioning of RNA/DNA, repair and healing of
the body, and even the functioning of the mind. There are natural enzymes in raw food,
which minimize the enzymes that need to be secreted by the body for digestion. The body's
enzymes can then be converted and be used for the process of detoxification, repair, and
overall healing. The preservation of our enzymes by eating live foods seems to play an
important role in slowing the aging process. With age there seems to be a significant drop
in enzyme reserve.

Cooked vs Raw Foods
Fat in its raw form is the best source of energy. But when fat is
cooked or processed, it no longer has the 40/60 ratio and quite often gets stored in the
body... and is a reason why many people are overweight.
Dr. Howell's research has also shown that a diet of cooked foods causes rapid, premature
death in mice. In fact, rats on a cooked and processed food diet live about two years.
While the rats that eat raw food live about three years. The rats eating raw food live 50%
longer. Dr. Howell also noted that the brain weight of rats eating cooked food went down
and their body weight went up.
Another study took two groups of hogs. The first group ate cooked potatoes and gained
weight rapidly. While the second group ate raw potatoes and didn't get fat. Dr. Howell
stated, based on his work in a sanitarium, "It is impossible to get people fat on raw
foods... regardless of the calorie intake."
The Pottinger Cat Study lasted for ten years, with three
generations of cats being studied. Approximately 900 cats were involved. Dr. Francis
Pottinger took 2 sets of cats and fed them only raw milk and raw meat. He took 3 more sets
of cats and fed them cooked meat and pasteurized milk. This study was specifically
designed to show the difference between eating raw foods versus cooked and processed foods
over a long period of time.
The cats eating the raw food were disease free and healthy,
generation after generation after generation.
The cats eating the cooked and processed foods suffered. By the
end of the 1st generation the cats started to develop the same degenerative diseases we
get, and became quite lazy. By the end of the 2nd generation the cats had developed
degenerative diseases by mid-life. By the 3rd generation the cats eating the cooked foods
had developed degenerative diseases very early in life. Some were born blind and weak, and
had a much shorter life span. Many of the third generation cats couldn't produce
offspring.
Let's review what we have learned from these studies. We've
learned that every time raw foods were only consumed, good things happened, and every time
cooked foods were consumed, bad things happened.

The digestion of a banana requires very few stomach secretions.
What about a piece of fried chicken? Chicken contains no enzymes to help digestion. If the
chicken has been eaten quickly, there will be little enzyme activity from the saliva. It
will sit in the stomach like a lead brick. The body is forced to produce strong acid
secretions to build up to do some of the digestion. A coffee or two splashed down, dilutes
the digestive juices. The barely-digested chicken then moves on to the small intestine
where bile from the gallbladder emulsifies the chicken fat. The chicken is still in need
of more digestion so the remainder of the work will require the help of the pancreas. To
accomplish such a difficult task, the pancreas must produce large quantities of enzymes
which place a heavy burden on it.
Lets return to our piece of fried chicken. It has now been
sitting in the intestinal track for 24 hours. Because of its partially-digested state, it
has become rancid. The body must respond by producing a sticky mucus which envelopes the
putrefying chicken in a protective sack. As the fiberless meat moves slowly through 30
feet of intestine, the mucus sack begins to dehydrate and impact on the colon wall. This
creates a hard, black, crust-like substance that builds up, layer upon layer, inside the
folds of the intestine further hindering the absorption of nutrients. Mercifully after 30
hours, this mucus sack of putrefying chicken is deposited with great effort into the
toilet. Our fried chicken has taken more than it has given, depleting the enzyme bank,
depositing very little in nutritional value, leaving impacted, dried mucus in its wake.
In contrast, a perfectly ripe banana is sweet to the taste and pleasant to the stomach.
Quickly, the enzymes that are present within the banana mix with saliva to break it down
into an absorbent vitamin-rich substance. No acid secretion is needed. Passing quickly
through the bowel, instead of creating mucus, the natural soft fibers clean the intestinal
wall. In a matter of a few hours the banana is easily deposited. No need to spend half
your life in the bathroom!
When you eat an abundance of raw fruits and vegetables, they will
act as a broom that gently sweeps and cleans the intestinal wall. The colon will be kept
squeaky clean. This is important because a clean intestine is necessary for health and to
heal disease.
All the nutrients we need can be found in fruits and vegetables.

The greatest value of
the raw food diet is its transformative value. To a great extent, when you take up the raw
food diet, you become a new and different and better person. You dont just stay the

The great harm of cooking is that it destroys or drives off

But the most convincing test is that of your own experience. You
can make a comparison between a meal of raw vegetables, and a meal of the same types of
vegetables cooked. The raw vegetables leave you feeling light, fresh and alert, whereas
the same vegetables cooked will make you feel lethargic and sluggish. It is common
experience, how one feels lazy, dull and sluggish for hours after a big meal. But meals of
raw food dont produce such lethargy and dullness. Vegetarians dont believe in
killing for food, but too often they kill their food by cooking it!
